I will help you book Gejo for the special dinner course, which includes a Tour-Exclusive Artisan-Crafted Sushi Plate. Operating out of the port town of Iwase, Chef Takahiro Shimojo draws on his international experiences to bring a unique, inventive approach to Toyama’s local ingredients. Carefully selecting his rice and water, he deeply values his relationships with local producers. This discerning eye also extends to his choice of tableware, transforming his dining counter into a space where guests can intimately experience Toyama’s exquisite traditional crafts. [Plate] The Tateyama Mountain Range Emerging in Black Lacquer Crafted exclusively for GEJO by Urushigei Yoshikawa, this original sushi plate features a motif of the majestic Tateyama Mountain Range. To ensure the cuisine remains the undisputed star of the dish, the artisan deliberately restrained the striking brilliance of the rankaku (eggshell inlay) technique, choosing instead to depict the mountains in subtle black lacquer. At first glance, the Tateyama mountains remain hidden in the darkness. Yet, as the light catches the surface or the viewing angle shifts, their majestic silhouettes quietly emerge. It is a masterpiece that beautifully expresses the profound depth unique to urushi and the elegant Japanese aesthetic of “the beauty of subtraction.” Production: Shitsugei Yoshikawa / Kazuyuki Yoshikawa Material: Japanese Horse Chestnut (Tochi) wood, Urushi lacquer, Eggshell Technique: Urushi lacquer art, Rankaku-nuri (Eggshell inlay)
