Highlights

I will help you book Sasaki for the special dinner course, which includes a Tour-Exclusive Artisan-Crafted Sushi Plate.

Featuring the finest seafood from Toyama Bay, Sushidokoro Sasaki spares no effort in the meticulous preparation of each ingredient. Delicate shiroebi (white shrimp) are peeled one by one by hand, with every topping receiving its own carefully tailored preparation. The shari (sushi rice), made from locally grown Toyama rice, is expertly seasoned using a masterful balance of white and red vinegar, crafted to melt effortlessly in your mouth.

Suiryu ― Pure Tin Casting
Born from Sushidokoro Sasaki’s heartfelt desire to delight international guests, this 100% pure tin plate features a striking dragon motif.
The original piece, “Water Dragon” (Suiryu), was meticulously hand-carved into brass by Yuka Fujimori of Wada Chokin Kobo. Using this as the master mold, Nousaku—a renowned casting manufacturer with over a century of history—cast the final plate in pure tin.
Through the traditional sand-casting technique, every delicate detail of the original engraving—from the dragon’s scales and claws to the cresting waves—has been faithfully reproduced. It is an experimental masterpiece where two distinct artisan techniques, metal engraving and casting, beautifully intersect.
